The Suehiro Japanese Waterstone will sharpen your knife blade like no other sharpener. They make an excellent sharpener for most larger blades and are perhaps the oldest and most efficient means to acheive a long lasting smooth edge.
The 800 grit is a rough stone ideally suited to starting the sharpening process of a dull blade.
The 1000 grit is a less rough stone perfectly suited as a follow-up treatment after the rough 600 grit to gradually set a fine edge.
The 1200 grit has a low-mid range roughness and will finish of the blade edge after treatment with the 800 and 1000 grit stones.
