Great Knife 4.5 stars
I have had this a little while now, but recently spent a good couple of hours on the blade. It's a great chopper but a bit too thick behind the edge, so I have re-profiled it to a nice high convex edge at about 30 degrees inclusive. Be warned - rhis steel has been hardened very well, I would say about 61 HRC, and you will need diamonds to change the profile. Well worth doing as it brings out the best in the blde. I must say thuogh that the handle is a little more squared than I would prefer.
