Great blades, but are they practical?
These knives are good. Very good. By that I mean the blades are fantastic. Balance in hand is wonderful. Sharpening is easy. Cutting performance superb. But however much I have tried to treat and protect the wooden handles, they are vulnerable to expansion and warping. The handles hate water (not ideal in a kitchen). I've added oils and wood balms. They've never been near a dishwasher. They still need constant maintenance. The block is hopeless. The plastic rods split and break and make it all but impossible to put the blades in it after a few weeks. And yet I still love them. So, buy them (Boker are a cut above the rest), but treat the handles before you use them, and be prepared to look after them carefully.
